Savoury Protein Muffins

20g Protein per serving

Hierdie heerlike proteïen muffins is perfek vir ontbyt, middagete of as ‘n vinnige peuselhappie!

Ingredients

  • 150g Cake flour (or you can use all-purpose flour)
  • 50g Self-Raising flour
  • 1 tsp Baking Powder
  • 60g Mozzarella cheese
  • 30g Parmesan cheese
  • 250ml Fat-free milk
  • 100g Fat-free plain smooth cottage cheese
  • 1 egg
  • 1 egg white
  • 1 tsp dried thyme (or oregano, rosemary, etc.)
  • Salt

**Jy kan enige meel gebruik. Die rede waarom ek die meel meng, is net om 'n lugtiger muffin te maak. Maar as jy net gewone meel gebruik, kan jy meer bakpoeier byvoeg.

** Jy kan meer herbs byvoeg en selfs stukkies bacon of enigiets waarvan jy hou!

Method

Stap 1

Meng al jou droë bestanddele saam in ‘n bak.

Stap 2

In ‘n aparte bak, meng die vloeibare bestanddele saam.

Stap 3

Meng die vloeibare bestanddele by die droë bestanddele, en meng goed saam. Moet nie "oormeng" nie. Voeg nou ook die mozzarella en parmesan by.

Stap 4

Giet die mengsel in jou muffinpan. Verdeel dit in 10 porsies, maar jy kan meer of minder maak as jy wil.

Stap 5

Bak in die oond teen 180°C vir minstens 20 minute. Oonde verskil, so hou dit dop – dit kan dalk tot 30 minute neem. My oond is nogal baie vinnig! 😊
